Can jailbraking be un-done so to speak?

I believe so. There are a lot of walk-thoughs on the internet about jailbreaking and un-jailbreaking. I can tell you you will need a firmware file from Apple downloaded to your PC.

Do you know where I can find this firmware file? I am already running the latest version (installed via Itunes)

You are welcome. You can do a file search on your PC for IPSW (that is the file extension for the firmware.) However, you are still going to have to put your device in a recovery state. On the iPod touch, this is done by holding down the power and home button at the same time until the device power's off. You then KEEP the home button pressed for 10-30 seconds after that. It has been a while since I have had to do this, so I still recommend trying to look up the exact instructions on the internet using google. Hope this helps and good luck.
